Greek Yoghurt Breakfast Bowl with Granola

Ingredients: 

For the greek yogurt bowl

  • 400 g greek yoghurt
  • 20 g almonds
  • 20 g pistachios
  • 2 tsp honey
  • 25 g blueberries
  • 2 strawberries
  • 1/2 banana

For the granola

  • 110 g oats
  • 1 banana
  • 28 g chopped almonds
  • 25 g pumpkin seeds
  • 1/2 tsp vanilla extract
  • 1/2 lemon
  • 50 g honey
  • 35 g coconut oil
  • 50 g blueberries 

Preparation:

  1. Heat the oven up to 175 °C. Put backing paper onto tray.
  2. For Granola mash up banana. Rub of lemon peel.
  3. Mix honey and coconut oil. Add vanilla extract, lemon peel and banana.
  4. Add oats, pumpkin seeds and almonds to the banana and honey mixture and place it on the tray. Press blueberries into the mixture and bake for 25 minutes in the preheated oven. Let it cool down and crumble it into small pieces.
  5. For Greek Yogurt Bowls cut strawberries in half and banana in slices. Chop up almonds and pistachios.
  6. Put yoghurt into a bowl. Top up with banana slices, strawberries and blueberries. Add chopped almonds, pistachios and granola. Sweet with honey.
