Refreshing homemade sorbets

In the summer, sorbets are wonderfully refreshing and the fresh fruits make them also super healthy. It’s really quick and easy to make this fruit ice cream, even for those inexperienced in the kitchen.

A few recipe ideas to show you how simple they are to make:

Idea 1: Mango and coconut sorbet

You need a very ripe mango. Peel it, remove the stone and you should have about 250 g of ripe mango. Puree the mango in a blender, add 150 ml of coconut milk, 100 g of sugar and the juice of one lime, then mix it all together. Divide the mixture between four dessert bowls and put it in the freezer.  You need to stir the mango coconut sorbet a few times and it should be ready to serve in about 3 to 4 hours.

 

Idea 2: Apricot pepper sorbet

This recipe shows that a sorbet doesn’t always need to be only fruits, but can contain vegetables too. You need about 300 g of ripe apricots. Remove the stones and put them in the blender. Then add 2 medium sized red peppers, cleaned and with the seeds removed, cut small and added to the blender. Then add 100 ml of full fat milk and 50 ml of cream, 70 g of sugar, the juice of one lemon and, if desired, a pinch of chilli. Blend everything until if has formed an airy mixture. Pour it into 4 dessert bowls and put into the freezer. Occasional stirring will prevent large ice crystals forming. This tasty sorbet will be ready to serve in 3 to 4 hours.

 

Idea 3: Red currant and sparkling wine sorbet

This sorbet is really quick to make and ready to serve in an hour. You need 200 g of fresh red currants, 50 g of blackcurrants, a packet of vanilla sugar and 3 tablespoons of icing sugar. Blend the mixture well, then pour it into 4 champagne glasses and put them in the freezer for an hour. To serve, chill a bottle of dry sparkling wine. Pour it over the sorbet before serving. You need about 150 ml of sparkling wine per bowl.
