Vanilla oatmeal pancakes

We’ve created these interesting oatmeal pancakes. As for sugar or sweetener, it’s entirely up to you whether you add it. You could make totally unsweetened pancakes and serve them with roasted vegetables or a green salad. It makes a healthy, filling dish for lunch or dinner. 

Ingredients:

150ml vanilla soya milk
1 cup (250g) oatmeal
pinch of salt
1 egg
drop of vanilla
1 tablespoon of hazelnut or walnut oil
1-2 tablespoons dry sweetener to taste (coconut sugar, Stevia)

Recipe:

  1. Whisk the egg while adding the milk, vanilla, sweetener and salt.
  2. Add the sieved oatmeal and continue to whisk.  Leave the batter to sit for 5 minutes. It shouldn’t be too thick or runny (the texture of cream). If the batter is too runny, add a bit more oatmeal. And if it’s too thick, add more milk.
  3. Heat the frying pain, pour in a bit of batter and cook the pancake on a medium heat for about 1 minute each side.
  4. They’re delicious eaten with stewed pear or Agave syrup.
