Authentic Italian Cantuccini Recipe

Ingredients:

  • 250 g flour

  • 150 g sugar

  • 2 eggs

  • 1 tsp baking powder

  • 1 sachet vanilla sugar

  • Pinch of salt

  • 200 g almonds (whole, unpeeled)

  • Optional: lemon zest, anise, a splash of Amaretto

Instructions:

  1. Preheat oven to 180°C / 350°F.

  2. Mix eggs, sugar, vanilla sugar, and salt until creamy.

  3. Stir in flour and baking powder.

  4. Fold in almonds. Add lemon zest or Amaretto if desired.

  5. Shape dough into 2–3 logs, place on a baking tray, and bake for 25 minutes.

  6. Cool slightly, then slice diagonally.

  7. Bake slices for another 10–12 minutes until golden and crisp.

Tip: Enjoy with coffee, or go classic with a glass of Vin Santo.
